It’s hard to feel like the “belle of the ball” in a mega hotel, but with the Diplomat’s attention to detail and design, it’s hard to want to stay anywhere else. The largest hotel in all of Broward County, the Diplomat Beach Resort offers near-perfect views from high above the sea: from the Atlantic Ocean and Intracoastal Waterway, all the way to the Hollywood skyline, its sparkling sands and beyond. Bringing a taste of the outside in, each one of its 1,000 rooms are simply serene. Divided into two separate design schemes, half the rooms reflect “sunrise” while the other reflects the “sunset.” The first of the two manages to find the perfect balance between soothing and exciting, juxtaposing colorful, vibrant hues with calm blue accents, nautical ropes, deckchairs and carpets intertwined with coral patterns. This dazzling re-imagination didn’t come without some tasty places to eat, and the Diplomat Beach Resort has 10 of them. Most notably is the coastal-American Point Royal, the brainchild of celebrity chef, restaurateur, Chopped judge and Iron Chef winner Geoffrey Zakarian. Perfect for a seaside retreat, this spot was created by the celebrity exclusively for the Diplomat Beach Resort. And while the restaurant itself is snazzy, the food is accessible. It has the hotel’s only raw bar, serves cocktails made with fresh-squeezed juices, and has a menu of Florida, ocean-inspired fare, like Fresh Spaghetti with Maine sea urchin, Ora King Salmon with a mustard chicken jus, and Hamachi Crudo with Fuji apples and a delicate cranberry relish. Mmmmm good. 

Outside of that, Bristol’s Burgers is a casual hangout with boozy and non-boozy milkshakes, loaded foot-long Wagyu beef hot dogs, and signature oval-shaped beef burgers on house-made sub rolls. Candy & Cones is a classic soda fountain counter with ice cream churned onsite, giant sundaes, and every ice cream pop and sandwich you can imagine (and even those you can’t). Inspired by the 1950s, Diplomat Prime is a steakhouse concept with prime beef aged in-house and seasonally driven seafood dishes. At the waterfront, Italian Portico Beer & Wine Garden, which is just steps from the hotel’s marina, you can drink Old and New World wines, local craft beers and signature cocktails on tap, and when you’re not bellying up to the bar, can pair those with backyard games like Ping-Pong, corn hole and life-size Jenga. Finally, what would a seaside hotel be without some good sushi? Amidst the other options, Monkitail stands out. Started by celebrity chef Michael Schulson, this modern Japanese watering hole puts a contemporary spin on classic izakaya (Japanese small plates)—and has a 15-seat sushi bar that lets you enjoy enchanting Atlantic Ocean views while you eat. 

 

And of course, there’s so much fun to be had.

What’s fun for you? Are you a traveler who has to go out and do all the time… or do you just like to relax by the pool? It doesn’t matter. At the Diplomat, you can do both.
